Feijoada is a flavoursome bean stew originated from Portugal and Brazil – it is considered the national dish of Brazil.
A true Brazilian feijoada recipe includes a ham hock in the stew to give it a great meaty flavour but we’re not that fancy here haha.
Feijoada is a great side dish and complement to rice, vegetables and grilled meats, and even slices of oranges (that helps in digestion). But hey – eat it however you want and with whatever you want! You can add other vegetables into the stew for a melting pot of flavour and taste.
It is best to use dry beans and cook them but who has hours to cook them? (well, unless you use a pressure cooker – done in 20 minutes!)
Ingredients
(Serves 2; Scale accordingly for less or more servings)
- 1 ~400g (14oz) can of cooked black beans
- 1 small onion or 1 half of a regular onion, finely diced and sliced
- 2-4 cloves of fresh garlic, chopped
- 1T of Vegetable oil (Any kind – Sunflower, canola, olive, etc)
- 1/4 t of coriander powder
- Salt
- Pepper
Optionals:
- 1-2 chopped chorizo sausages.
- Stock powder such as vegetable or beef for added flavour.
- 1-2 bay leaves.
- Fresh coriander/cilantro, chopped; as a garnish on top.
- Orange slices to serve along aside it.
Instructions
- Place a small pot on a stovetop and put the temperature on high-medium heat.
- Add oil.
- When the pot and oil is heated, add the onions and garlic (You can also add the chopped chorizo here). Saute for 2-3 minutes.
- Once the onions have softened, add the beans, salt, and pepper.
- Add 2 or 3 tablespoons of water to the mix (You can sprinkle some stock powder in at this point).
- Stir the mixture and bring the pot to a simmer on a medium-low heat for a 2-3 minutes.
- Using a strong spoon, mash some beans against the side of the pot and stir to thicken the stew. Feel free to add water if you feel the stew needs it.
- Once the stew is at your ideal thickness after a few minutes of cooking, turn off the stovetop and remove the pot.
- Season to taste with salt and pepper.
- Serve with your favourite main, vegetables and/or meat.
